Bird at the Bar is Dorset bartender Rebecca Bird. Living by the beach & with the New Forest close by, she creates sustainable cocktails using zero waste, foraged & home grown ingredients.
Rebecca will be creating two cocktails using sustainable British brands & ingredients that would usually end up on the compost heap. Her zero waste cocktails have included a banana peel old fashioned & a carrot peel spritz.
Her foraged gorse & zero waste clarified tomato Everleaf cocktail won her a trip to Iceland. One of her favourite sustainable brands is Arbikie on the east coast of Scotland. They are aiming to be one of the world’s most sustainable distilleries with their field to bottle spirits & single estate approach. Last year Rebecca was runner up in their zero waste cocktail competition & will be creating a cocktail with their chilli vodka.
Bird at the Bar runs seasonal pop ups, bar takeovers & masterclasses, creating foraged, sustainable & kitchen garden menus tailored to the seasons & availability of produce.
I'm Martin Dawkins, aka The Rustic Chef. With over two decades in the kitchen, I've earned three rosettes and even a nod from the Michelin guide!
The Rustic Chef vibe is all about epic food with a sustainable twist. I pick ingredients with a low carbon footprint, supporting local producers in Hampshire. It's not just about delicious dishes; it's about doing right by the environment and our community.
My cooking philosophy is simple – let the flavours shine. No need for too much fancy stuff; fresh and vibrant ingredients can speak for themselves. Every dish is my way of saying thanks to what nature provides.
When I'm not cooking up a storm, you might catch me at food festivals. I hosted the Chef's Demonstration Theatre at the New Forest Show and most recently live cooking demos on the NEC stage at BoatLife 2024. It's all about sharing the love for good food.
So, join me on a fun foodie adventure, where every dish tells a story of passion, dedication and a love for the simple joys of great food that is easy to create. I want to inspire and motivate you to make healthy, tasty dishes using great, local ingredients that don’t cost the earth or take long to make!
Andrew is a Live Events Host, Presenter, Outdoor Cooking Specialist, Demonstration Chef, Actor and Speaker.
He runs several BBQ Schools in the UK and has hosted and cooked for many prestigious Live Food Events and Festivals including Taste of Dubai, Abu Dhabi, London & Dublin, the Ideal Home Shows, the Christchurch and Malton Food Festivals, the Eat & Drink Festivals, Street Feast Abu Dhabi, Taste the World Dubai, the London & Southampton Boat Shows, Cake & Bake Shows, Great British Bake Off Live, ITV’s This Morning Live, The Times Destinations Shows, Jamie Oliver’s Big Feastival and the BBC’s Carfest for Children in Need.
Andrew has regularly hosted many other shows including the BBC’s Top Gear Live Arena Shows, the National Pet Shows, Dog-Fest, The Motorhome & Caravan Shows and every year hosts The Front Row and City Dinner Fund Raising Events for The Back Up Trust Spinal Injury Charity.

Initially a COVID lockdown project, The Sustainable Chef (Dr. Andy Oakey) was born out of a desire to help people to cook with more confidence whilst reducing their environmental impact. After nearly 2 years of trial and error alongside a full-time day job, The Sustainable Chef cookbook became a reality in 2021.
Since then, Andy has been sharing his recipes and knowledge with food festival crowds up and down the country, including at the BBC Good Food Show, London VegFest, and multiple Foodies Festivals.
After approaching sustainability guru, Mike Berners-Lee (author, How Bad are Bananas?), Andy has had his ideas and recipes validated, supporting his sustainability credentials, and he's back with the Fully Charged crew for 2024.
